SPUN AND PULLED SUGAR : Page 344

As we progress from a leaf to a little wild flower, yellow jonquil, sweet pea, calla lily, orchid and a rose, you will notice that all the petals are pulled from thecandy in the same manner. They all start by lookinglike a leaf. Then by using your thumb and fingers andshaping the leaf and pulling slightly all the differentpetals are made. It is very important that you learn tomake a leaf properly. Once leaf-making is masteredthe rest of the flowers can be made without too muchdifficulty.

Make sure you keep the candy soft enough to workwith. This is why we divide our batches into 3 parts. While you are working with one piece and it tends toget hard, the other two pieces are warmed directly infront of the heater. While working with the candy, continue moving the pieces around to maintain as evena temperature as possible through the candy.
