PULLED SUGAR EQUIPMENT
A small brass screen with a 40 to 60 gauge mesh is usedto lay the candy on while working pulled sugar. Theelectric heater is a standard home heater with the pro-tective guard removed from the front. The heater isused to keep the batch of candy soft and pliable. Thesmall leaf mold shown on the next page is made of lead.Once a leaf is pulled out it is pressed into the moldproducing the veins and indentations of a leaf. We usea scissors to cut the pulled sugar ribbons, bows, etc.
A canvas strip approximately 3 feet long and 14 incheswide is used to stretch out ribbons and bows. A marble slab is used for pouring batches of candy on. Althoughmarble is the ideal surface for pulled sugar work, youmay use porcelain, a large cookie sheet or Formica.A surface about one foot wide and two feet long isneeded for the amount of candy given in the followingrecipe.
