THE DOLL CAKE

The illustrations are almost self-explanatory, but wewill briefly outline the procedure to make it moreclearly understood. The finished cake contains a com-plete little doll that may be dressed in doll clothing afterthe cake has been eaten. Use the doll in any cake.Here, we use a torte cake.

The unusual scalloped effect in the skirt, is made with the use of a cardboard comb.

The comb is moved in a slight up and down motion asyou work it around the cake. For best results, thisscalloped effect should be started at the base of thecake.

For the upper portion of the dress, thin down a smallamount of delicate pink boiled or royal icing. Paint thetop portion of the dress with a brush. For our illustra-tions, we used a strapless type gown. The bustle or ruffle effect in the next step is made with a No. 104rose tube. The lower ruffle is completed first. With thelarge end of the tube touching the cake and the narrowend standing down and out, begin squeezing the tubeand moving along the curve with a slight back andforth motion. This gives the fluted edge effect. A verydainty effect may be obtained by alternating the ruffles; first a white and then a pink ruffle. In finishing off thedress, a small pink flower was placed between all thelower ruffles. A sash with bow and streamers flowingdown the side of the dress is piped on in delicate pinkicing. The hat may be made of gumpaste, but we sug-gest the use of paper to eliminate the bother of makinggumpaste. Cut out a 2 inch circle; make one cut in tothe center of the circle and overlap the cut edges about 1/2inch and staple. The hat may be painted with athinned down pink icing. This doll may be used for abirthday cake or wedding cake. In the latter case, thedolls should be dressed in colors matching the brides-maids.
