Step No. 1. Using the same No. 16 star tube, hold thetube at a 45 degree angle and touch the pan. Applypressure with the right hand and draw a straight lineapproximately 2 inches long. As the tube is movedalong, an easy, continuous pressure must be applied. Ifthe icing breaks, it is because you have relaxed pressure.If your icing builds up or pushes from side to side, it isbecause you are applying too much pressure. Continue this straight line and then try crossing the line as illus- trated.
