COLOR : Page 58

Before actually going into the subject of colored icings,a short discussion of color itself may be in order. Thefull study of color can, of course, occupy a lifetime, but in its application to cake decorating it may begreatly simplified. To begin with, the same rules thatapply to the mixing of the artist's colors apply as wellto food coloring. When the artist wants green he mixesthe proper proportions of blue and yellow, and whenthe picture calls for violet he merely mixes red andblue. A glance at the "color wheel" illustrated at right will show how all the possible color combinations aremade from the three primary colors-blue, yellow andred.
