Dropping out mints using candy funnel. waxed paper as illustrated.
POWDERED SUGAR MINTS
21/2 cups granulated sugar
1 cup water
pinch cream of tartar
2 cups powdered sugarmint oil
Combine sugar, water and cream of tartar and bringto a boil at 230 degrees. Always wash down crystalsfrom sides of pan with small brush dipped in water. Add 2 cups powdered sugar and a few drops of mintoil and beat vigorously with a small hand whip untilcreamy, about 2 or 3 minutes.
Drop round patties on waxed paper from the end ofa spoon. Or pour mixture into a funnel and allowdrops to fall as illustrated. A stick of about 1/2 inchin diameter is used in the funnel. By moving the stick up and down you control the flow through the funneland the size of the mints.
