Before we go on to the next group of borders we want togive you a few hints on STRING WORK. This type ofborder is frequently referred to as being difficult. This, we can assure you, is not the case. Actually string workis easy. The most important thing about String Workis to use the proper icing . . . Royal or Boiled, thinneddown to the proper consistency. If your icing is too thinor soft it will not hold together. If it is too stiff it will not string out or flow smoothly. It must be just right.For practice we suggest that you work on the sides of
a cookie pan or similar object, that is in an uprightposition.
